Through trial and error, and with polishing from an Echizen cutlery craftsman, one of the most distinguished traditional crafts of Japan, this knife has sufficient sharpness to cut the cake into pieces as well as to cut the cake out of the mold. This single knife does not require you to switch between a cutting knife and a scraper after cutting the cake out of the mold. This allows you to make the cake smartly. Chiffon 21 is a perfect size for a mold 21 cm (8 in.) in diameter.

Mr. Watanabe, engineering PhD and owner of Snowcafe, pursued the highest technique of mixing the ingredients and baking the dough with his knowledge of fluid engineering and a spirit of inquiry and came to be satisfied with the cake itself. After cutting the cake out of the mold, however, he was disappointed with the finished product. With a pallet knife, even Mr. Watanabe found it hard to cut the cake out of the mold. After rounds of tentative planning and consideration, he visited Takefu Knife Village, where craftsmen produce Echizen cutlery, a local traditional craft.

There Mr. Watanabe met Mr. Yuji Toya, a polishing craftsman and the second generation of Toya Cutlery. After countless tentative plans, they finally developed to their satisfaction a fine knife for removing chiffon cake from molds. Then in order to share the knife with many other chiffonists (chiffon cake craftsmen and lovers) who had faced the same problem, they started to work with Mr. Hiro Okubo, product designer and representative of CLASIMONs, on commercializing a special tool for chiffon cake craftsmen. Mr. Okubo’s expertise in human engineering and 3D printer production became very useful for product designing. Through Mr. Watanabe’s social networks, opinions and inquiries had been collected for a year from chiffonists throughout the country who had been also trying to bake the perfect piece of chiffon cake on purpose to make the best use of their experiences for the product design. After two years of development, Chiffon21 has finally reached the market.

Chiffon21 is strong and flexible, delicate movements of the finger tips are conveyed to the edge of the knife, which allows delicate control of the knife edge, thus leaving the surface of the cake smooth.
